Ingredients

  • 1 cup Trahanas
  • 5 cups water or chicken stock
  • 150g Halloumi cheese, diced
  • Freshly cracked black pepper
  • Optional: shredded cooked chicken

Method

  1. Rinse the Trahanas under cold water.
  2. Place the Trahanas and water or stock into a large pot.
  3. Bring gently to the boil, stirring occasionally.
  4. Reduce heat and simmer for 20–30 minutes until the grains soften and begin to break down.
  5. Add the diced Halloumi and continue cooking for another 5 minutes.
  6. Season with freshly cracked black pepper.
  7. For a heartier meal, stir through some shredded chicken before serving.

Serve hot with crusty bread and a drizzle of extra virgin olive oil.
